1 pound Chisholm Trail Grass-fed ground beef
Salt and pepper to taste
Dinner rolls
Burger toppings, as desired—remember: chili, guacamole, salsa, queso for that Texas flavor.
Cook the burgers on the grill or in the pan for about four or five minutes, then flip and cook for an additional four to five minutes. Internal temperature of 160 degrees. For a medium or medium-rare burger, cook the sliders for three to four minutes per side. Allow the burgers to rest for a few minutes before garnishing
4 tablespoons vegetable oil
3 pounds beef chuck or round, cut into ¼- to ½-inch cubes
1 cup onions, chopped (more if you like)
4 cloves garlic, finely minced
4 – 6 tablespoons chili powder, (or to taste)
2 tablespoons flour
3 teaspoon cumin seed, crushed
2 tsp oregano, crushed (from spice bottle)
2 teaspoons salt
¼ teaspoon cayenne pepper
14.5-ounce can(s)
Condensed beef broth
1½ cup water
1-2 tablespoons cornmeal
Directions
Heat 2 tablespoons of oil in a heavy large pot with tight-fitting lid. Lightly brown beef, removing as it browns. Add more oil as needed.
After all meat is browned and removed from pot, add garlic and onion to pot and sauté until tender and lightly browned. Return all meat to pan.
Combine chili powder, flour, and cumin—see the note in the linked recipe. Sprinkle this mixture over the meat; stir over low heat until meat is evenly coated, about 2 minutes.
Stir in oregano, salt, cayenne, beef broth and water. Bring to a boil, stirring often. Lower heat, simmer slowly, with lid on for about 2 hours, or until meat is very tender.
Sprinkle in the cornmeal, stirring constantly, until mixture is slightly thickened, 5 – 10 minutes.
It’s best to let chili “rest” for 15 to 30 minutes before eating; it gives the meat a chance to absorb more of the sauce
2 15-ounce cans black-eyed peas, rinsed and drained
½ onion, finely chopped
1 tablespoon chopped fresh cilantro
1 tomato, finely chopped and drained
1 fresh jalapeno pepper, stem and seeds removed, coarsely chopped
½ cup bottled Italian dressing
Directions
In a large bowl, combine all ingredients except dressing. Pour dressing over top and toss to coat well. Cover and chill until ready to serve.
Easy Sweet Spicy Jalapeño Relish
Make this a few days before New Year’s Eve so it’s ready!
28 ounces pickled jalapeños.
Sugar (generally the same amount of sugar as the brine you remove from the can or jar)
Directions
Drain off peppers. Grind peppers in a food processor until the consistency of relish and place in a quart jar. Replace vinegar with sugar. Rotate jar every few hours until all sugar becomes liquid. Store in refrigerator and wait a few days and enjoy.
